Not only is it cheaper, you know exactly what goes into them and you can easily adjust the flavor to your taste. For my Brazil nut white chocolates, I used only the simplest ingredients.   • Cacao butter: Must not be swapped nor removed as it’s responsible for bringing out an authentic white chocolate flavor with a smooth, melt-in-your-mouth consistency.
  • Brazil nut butter: Enhances the recipe’s nutty flavor and creamy texture.
  • Sweetener: Use powdered sugar or Lakanto’s Classic Monk Fruit Powdered Sweetener for keto to add a natural light sweetness without the gritty texture.
  • Collagen powder: Use collagen derived from grass-fed beef, this gives the chocolate a smoother and creamier texture.

Step-By-Step Instructions

These nutty white chocolates always disappear fast. Made with only the cleanest and simplest ingredients, they’re up for grabs in less than an hour. Perfect as a grab-and-go snack or dessert that will send your taste buds singing! Follow the steps below to make the perfect Brazil nut white chocolate:

  • Create the white chocolate mixture. Melt coconut oil with cacao butter in a double boiler or saucepan, then stir in Brazil nut butter. Once melted and thoroughly combined, add collagen powder, vanilla extract, salt, and sugar substitute. Stir until smooth.

  • If you don’t have Lakanto sweetener, substitute with erythritol or liquid stevia.

My Brazil nut white chocolate doesn’t spoil easily and is solid enough to be left at room temperature for hours. But it’s been hot and humid here, so I keep my chocolate in the fridge to enjoy it at its best, nice and chilled.

If refrigerating, place the chocolates in an airtight container to prevent moisture from affecting the texture. They should keep well for a few weeks if stored properly.

These lovely treats also hold for a longer time in the freezer for up to 6 months. To avoid moisture-related texture issues, double-wrap your chocolates in plastic wrap and place them in a tightly sealed container.   • In a double boiler or saucepan over low heat, gently melt the coconut oil with cacao butter.
    ¼ cup coconut oil, 2 ounces cacao butter
  • Remove from heat and stir in the nut butter. Add Lakanto, collagen, vanilla, and salt. Continue stirring until smooth.
    2 tablespoons Brazil nut butter, 1 tablespoon powdered Monkfruit Sweetener, 1 tablespoon grass-fed beef collagen powder, ¼ teaspoon vanilla extract, ⅛ teaspoon salt
  • Distribute the whole Brazil nuts equally between 8 mini muffin molds or at the bottom of whatever container you choose to shape the chocolate in.
    ½ cup Brazil nuts
  • Pour the white chocolate mixture evenly into each of the wells. Place in the freezer for 30 minutes to chill. Once set, they will pop out easily. Tip upside down and bang on the counter to release or take a knife, run around the edges, and separate the chocolate from the mold.
