  1. Make the omelet. In a skillet, heat coconut oil over medium heat. Whisk 2 eggs and pour into the pan. Allow to set then fold over omelet style.

  • Taste and adjust!ย I always recommend tasting while cooking so you can get to know the dish and adjust the seasoning as you like best.ย 
  • Avoid heating too low or too high.ย When the heat is too low, a 2-egg omelet wonโ€™t fluff enough for you to slide it off the pan easily. If itโ€™s too high, the egg mixture will burn at the bottom long before the rest of it can cook into the omelet. Aim to get it just right so you won’t lose that delicate texture and flavor.
  • Fold carefully.ย Use a spatula to fold your omelet in half. If itโ€™s too thick, slide the omelet onto your plate and fold it there to avoid breaking it.

How to Store This Recipe

If you have leftovers or planning to prepare a big batch for a crowd, I suggest storing the 2-egg omelet and zucchini hummus in separate airtight containers. If youโ€™re storing multiple omelets, place parchment paper between layers to prevent them from sticking.

Store them in the fridge within 2 hours of cooking and they should keep fresh for up to 4 to 5 days.

The zucchini hummus is best enjoyed fresh but you can keep it in the fridge for up to two days. I donโ€™t recommend freezing as it can change the texture and may become watery when thawed.
