Consider making a family-friendly Keto Meatball Casserole also.
EASY KETO MEATBALL RECIPE
- 2 pounds ground beef
- 1 cup shredded mozzarella cheese
- ½ cup grated parmesan cheese
- 1 egg
- 1 tablespoon Italian Seasoning
- 1 teaspoon garlic powder
- 1 teaspoon salt
Directions
The strict carnivore meatball recipe and the easy keto meatball recipe are both prepared the same way.
Combine all ingredients in a large bowl and mix thoroughly.
Form 2 to 3-ounce balls in the palm of your hand. That’s roughly 12 to 16 meatballs.
Arrange in a glass baking dish and bake for 25-30 minutes until cooked. I use a 9×13-inch (23×33-cm) glass dish. If you have something smaller, pack the balls in snuggly. It’s fine if the meatballs touch slightly while cooking.
Remove from the oven and cool for 5 minutes. Serve warm.
A typical serving size is 3 meatballs.
Freeze the leftovers and reheat when you want to eat them again. Arrange the meatballs on a cookie sheet after baking and freeze. Then remove and store in a freezer-safe bag for up to 3 months. Reheat in the oven or by simmering in a sauce of choice.

I hate shredded mozzarella because it’s always part skim and usually buy the full fat mozz, which would probably make the meatballs too watery. Otherwise they sound great. What about using full fat ricotta cheese in them as opposed to the mozz?
It’s so great to hear from you again! I don’t have experience in using full-fat ricotta in the meatballs. However conceptually, I don’t see it being a problem. Please let me know how it goes for you!
Keto & Carnivore are two totally different diets. Yes, similar but different! Garlic and Italian seasonings are not carnivore. Delicious recipes even if those are left out. The title of recipe and link are misleading if you’re searching for carnivore exclusively.
Hi Sean, I completely disagree that anything is misleading about this post. I clearly discuss all carnivore details and offer an additional keto option for those who choose that variation. The post text and recpie card do not conflate the diets at all.
