These low-carb keto crack biscuits are simply amazing. They have the perfect balance of savory, cheesy, and salty and boast a perfect texture for low-carb bread. Enjoy them at room temperature or slightly warmed for that ideal comfort food feel.
Just because you’re gluten-free or on a keto diet doesn’t mean you have to be deprived of cheesy, comforting rolls. I have you covered with these easy keto biscuits. Made with coconut flour, an excellent nut-free option for those with food sensitivities and allergies, these biscuits are naturally low-carb, keto, and gluten-free.
Best of all, these crack biscuits are easy to make. There’s no yeast; therefore, no need to wait for the dough to rise. The whole process will take you only 30 minutes from start to finish, and you can bake these beauties in whatever baking dish you desire. Use a standard baking casserole or the cast iron skillet for a country rustic look. Either way, they will undoubtedly be the star of the dinner table.
How do I serve crack biscuits? Start straight out of the oven with a pat of butter with fresh curly parsley on top for a nice touch. These savory flavors go with just about any meal, so pick your favorite dish and dress it up with biscuits.
Pair a hearty keto dinner like Keto Beef Stew, Slow Cooker Pot Roast, or Chicken a La King with a basket of these biscuits, and you have a well-rounded meal to serve your family.
How to Make Crack Biscuits
With only seven common ingredients plus seasonings, you’ll be on your way to tasty comfort food in as little as 30 minutes.
This no-fuss baked good is made with coconut flour, a great low-carb alternative to regular wheat flour. The final dough texture is moist but dense and compact rather than gooey and soft. Coconut flour is notorious for absorbing a lot of liquid, and you’ll see this happen while working with the dough.
Pair coconut flour with delicious ingredients like various kinds of cheese, flavorful herbs and spices, and a little bacon, and you have tasty cheesy biscuits that are kid-friendly and perfect with just about everything.
Ingredients
- Mozzarella cheese – shredded mozzarella cheese with low moisture will produce the best results.
- Cream cheese – full-fat plain cream cheese
- Large eggs
- Coconut flour – this naturally gluten-free flour is the base of this biscuit recipe and cannot be subbed with another flour. I buy coconut flour from Wildly Organic.
- Baking powder
- Cheddar cheese – divided shredded cheese; a portion will go into the biscuits, and the remaining cheese will top the biscuits for that classic cheddar biscuit look
- Bacon – about two ounces of cooked and chopped bacon; or conveniently use storebought bacon bits. I suggest farm-fresh bacon from White Oak Pastures.
- Seasonings – dried parsley, dried dill weed, onion powder, garlic powder, salt, and pepper; alternatively, you can use 1-ounce (or two tablespoons) of dry ranch seasoning
Substitutions and Variations
This crack biscuit recipe is naturally gluten-free, grain-free, and nut-free. The combination of cheeses is essential in this recipe as that is what gives this keto dough proper texture. This recipe is a spin-off of the popular fat head dough recipe made predominately with mozzarella cheese.
As a result, this recipe cannot be modified to be dairy-free, Whole30, or true paleo. Some people on the paleo diet tolerate dairy and would, therefore, follow the recipe as written, taking care to make sure the bacon is paleo compliant.
Adapt keto crack biscuits to best suit your diet. There are several easy ways to modify the recipe and adjust for particular dietary needs, as listed below.
- Keto diet – This recipe is naturally low-carb and keto-friendly.
- Low oxalate diet – Coconut flour is a great low-oxalate flour. All the other ingredients and also low-oxalate, making these biscuits a suitable choice for anyone on a low-oxalate diet.
- GAPS – Ensure that all ingredients are GAPS-compliant ingredients. Cheeses should be shredded at home as store-bought shredded cheeses often contain anti-caking agents. Avoid cream cheese with carob bean gum. And make sure your bacon is uncured and without nitrates and nitrites. Lastly, you would do best using a homemade DIY ranch seasoning or individual seasonings as written in the recipe.
Step-By-Step Directions
Follow these simple directions, and you’ll have crack keto biscuits in no time! You’ll start by making the fat head dough with coconut flour, then adding all the fun “crack” flavors like ranch seasoning, shredded cheese, and bacon.
Finally, pop them in the oven to bake until golden perfection. It’s a super easy process with no yeast or fussy kneading involved. No wasting time waiting while the dough rises.
Step one: Preheat oven
Preheat the oven to 400 degrees Fahrenheit (204 degrees Celsius). Grease an 8×8 baking dish and set aside.
Step two: Melt cheese
Melt the mozzarella cheese and cream cheese in a microwave-safe bowl in 30-second increments until completely melted and smooth. Stir between every increment. Alternatively, melt on the stovetop in a small saucepan over low heat, stirring regularly.
Step three: Blend dough
Add coconut flour, baking powder, and all dry seasonings to the bowl of a food processor with the s-blade attachment. Pulse to combine. Add the eggs and melted cheese mixture to the dry ingredients in the food processor.
Turn on and mix until thoroughly combined. Admittedly, the food processor is a game changer in this recipe. I first tested this crack biscuit recipe with a hand mixer and standard whisk beaters, but it did not work.
The melted cheese cooled too quickly and seized around one beater without incorporating into the dry flour. After that, I only recommend using a food processor with an s-blade attachment.
Step four: Fold in cheese and bacon
Transfer the dough to a large mixing bowl. Fold in cheddar cheese and bacon, reserving a little bit of both for topping, if desired. Shape the dough into a round ball.
Step five: Cut sections and shape
Transfer the dough onto a cutting board. Next, using a sharp knife, divide evenly into twelve sections. First, cut the dough ball in half, then half again. Finally, divide each quarter into three sections, making twelve even portions.
Roll each section into a ball between the palms of your hands and arrange them in the prepared baking dish. Gently press on the remaining shredded cheese and bacon for garnish if using. As you press, flatten the tops slightly.
Step six: Bake
Bake for 20-25 minutes or until the cheese on top melts and the dough cooks through.
Remove to a wire rack and cool before serving.

Can you freeze these for later?
Hello, Patti. You definitely can! I haven’t had any problems freezing these. Thaw them overnight and reheat in the oven before serving.
I’m always looking for fun new snacks for my kids that aren’t junk food. I made these yesterday and my kids loved them. I haven’t tried one yet, but they smelled amazing. I did have a little trouble with the dough. It was incredibly sticky, and I couldn’t really get it into a nice ball and cut it into 12 portions. I just had to separate it out into 12 balls and had to keep scraping the dough off of my hands so that I didn’t waste it. The only change that I made was that I left out the dried parsley since I didn’t have any on hand. Any suggestions? Should I add a little extra coconut flour? Or would the parsley have made that much difference?
Hello, Kelly. I’m happy to hear your kids enjoyed the biscuits! You’re right that omitting the parsley shouldn’t cause such a big change in the dough. Perhaps other ingredients were mismeasured? Adding more flour, until you get a good texture will likely be the fix you need.
I cannot wait to try these. I am not supposed to eat bacon, would it still taste good without it?
Hello, Anjonette. I think so! Like cheesy herb bread. That sounds good to me.
I’ve made these twice now and absolutely love them! Really hits the “I need some bread” spot. Thanks.
I recently prepared these keto crack biscuits, and I must say, I was thoroughly impressed with the outcome! This recipe is definitely a keeper, and I can’t wait to make it again soon.
Kid friendly for sure – mine are always asking me to make them. Thanks for the review, Jeneil.
