How to Make Chai Latte Chia Seed Pudding
Gather simple everyday ingredients and start making a dairy-free low-carb chia pudding!
Ingredients
Coconut milk – The healthy fats found in this delicious, dairy-free alternative make it an ideal and satisfying breakfast food. (1, 2) Coconut milk has a natural sweetness and a slightly nutty flavor. Although, you can easily substitute it with your favorite nut milk.
Sweetener – Choose your favorite keto sweetener. Ours is a monkfruit erythritol blend.
Spices – Cinnamon, ginger, and cardamon spice up this chai latte pudding. You can use cinnamon sticks, fresh ginger, and whole cardamom pods for a more robust flavor, or keep it simple with ground spices.
Black tea – Choose your favorite organic black tea or substitute chai tea and omit spices for an even simpler version of this recipe. Adjust the amount of tea to taste.
Chia seed – This amazing, little seed has a fascinating history of culinary use since the Aztecs! (3, 4) After soaking, the chia seeds expand many times their original size, thereby gelling into a creamy, pudding consistency.
Pecans – Though optional, pecans take this recipe over the top with a decadent crunch.
Sugar-free maple syrup – This is also optional, but the maple syrup flavor pairs perfectly with the pecans if you decide to use them.
Directions
- Whisk sweetener, coconut milk, cinnamon, ginger, and cardamom in a small saucepan. Gently bring to a boil over medium heat. Add tea bags and steep for 5-10 minutes.
- Discard the tea bags. Add chia seed and stir thoroughly. Let rest for 5 minutes, then stir again to mix evenly.
- Divide the pudding between two glass jars and transfer to the fridge to chill and thicken overnight.
- In the morning, evenly coat the pecans with maple syrup by tossing them in a bowl. Top each portion of pudding with nuts and serve.

Two questions. I have chai tea tea bags, can I use that and eliminate the spices since they are already in the tea bags? Also, I only have truvia sweetner, how much do I use of that? Thanks. I love chai lattes, and really miss them. Looking forward to making this.
If you want to leave out the spices, make your tea strong! You can reduce the spices a bit or keep them the same. Start with a little, take some taste tests and adjust as you like.
