Ingredients

Pancakes – I start with my favorite fluffy coconut flour pancakes, LINK which are good anytime, but all the more so in this strawberry shortcake pancake recipe!

Fresh strawberries – Celebrate summer with fresh berries! Slice them thinly or in half. Frozen strawberries will not work. Don’t worry, strawberries are keto. If you want to add more low-carb fruits, try fresh blueberries, blackberries, or cranberries.

Whipped cream – Take a look at Low-Carb No-Carbโ€™s keto whipped cream recipe if you donโ€™t already know how to make it. Alternatively, you can make coconut whipped cream for a dairy-free option.

Step-By-Step Directions

Start by pan-frying the pancakes. My keto pancake recipe is linked in the ingredient list above and in the recipe card below. You canโ€™t miss it. Follow the steps according to the recipe directions.

Slice the strawberries and whip the cream. Prep the toppings while you wait for the pancakes to finish cooking.

Create layers. Then, once you have a few pancakes ready, start layering. Place a pancake on a plate, scoop a generous spoonful of whipped cream and spread it thickly, then gently position a few pieces of strawberry. Add a second pancake and continue as high as you like!

I know I could never do that in my house because the children or animals would be all over it in a minute. But it sounds like a nice treat.
